Cauliflower Subzi
For years, Mallika Badrinath's - Vegetarian Gravies is one of the treasured cookbook in my cookbook collection. I saw this book in my cousin's place when I was a student and still learning art the basic cooking. I was fascinated by the variety of recipes in it and so along many years I've bought my own. I brought this with me into my new home to arm myself with the knowledge that this book has to offer. To this day I still refer to this book when I'm hunting for a new recipe or for a new taste.
There are lot of categories of books in her collection, each has got huge number of recipes varying from gravies, snacks, rice varieties, juices and so on.Her books offers tips and variations which are good for novice and expert cooks. I would recommend this remarkable collection to anyone.
Cauliflower Subzi in an excerpt from her book and has become one of my favorite. I've made minor changes to the original one to suit my taste buds. It's a simple, delicious one !
Ingredients:
Cauliflower - 1 (large)
Onion - 2 (Medium)
Tomatoes - 3 (Medium)
Potatoes - 2 (Medium)
Ginger-Garlic paste - 1 tsp
Turmeric - 1/4 tsp
Chilli powder - 2 tsps
Few Coriader leaves
Salt - 1 1/2 tsp or as required
Oil - 1 Tbsp
Grind together :
Grated coconut - 1/4 cup
Cardamoms(Elachi) - 3
Cinnamon(Dal Chini) - 1 inch piece
Poppy seeds - 2 tbsps (Soaked in warm water for about 15mins. Drain the water and grind along with other ingredients.)
Method:
Cut Onions, potatoes, tomatoes into small pieces. Separate cauliflower into small florets. Grind all the ingredients under "Grind together" into smooth paste.
Take a shallow pan, add oil. On medium heat, fry onions till transculent. Add ginger-garlic paste and the ground paste. Fry well, then add tomatoes and fry again. Add turmeric,chilli powder and mix well. Let it cook till the tomatoes turns mushy.
Add cauliflower florets, stir it well. Add salt. Add enough water and cook till the gravy becomes thick.
Garnish with coriander leaves and serve hot. I've served mine with Chapathis.

I have this book too and always browse through it when in search of ideas. I love this curry too.. your picture looks so good and tempting.
